Assistant Brewer

Job Responsibilities :

• Assistant Brewer oversees and directs all brewing processes including, but not limited to, raw material selection, recipe formulation, production schedules, troubleshooting, equipment maintenance, and finished product quality assurance/quality control procedures.
• Brewing and cellar operations including malt handling, wort production, fermentation, yeast handling, liquid transfer, fining, colloidal stabilization, filtration, carbonation, keg cleaning/coding/filing.
• Execute brewing production from start to finish and create brewing, filtration and bottling schedules.
• Operate and oversee all functions of the brewery, including; wort production, fermentation / cellaring process, canning QC & QA checks, CIP procedures, and detailed record keeping
• Oversee and develop the brew house staff through technical, supervisory, and line assignments in all functions supported by standard job descriptions
• Maintain efficient brewing schedule, including brewing, packaging, cleaning, maintenance, etc.
• Ensure proper fermentation process, including handling of yeast, cell counts, pitch rates, etc.
• Manage brewery team, train staff, schedule shifts, and encourage an overall positive environment.
• Lead brew-team meetings communicating current objectives, production performance to plan, challenges and successes, troubleshooting, and taking corrective action when necessary.
• New product development, recipe creation, scaling, etc.
• Represent the brewery at local events, trade shows, festivals, etc.
• Compiling brewing data like OG, wort cooling temperature etc are as per norms
• Check lautering time and plan accordingly.
• Follow up brewing staff to run brewing through Krones Scada and staff to check various parameters like OG, hop addition etc
• Follow on filtration operation with filter operators
• Oversee daily maintenance and proper cleaning of all brewing equipment and buildings.
• Update, analyse Fermentation data for correction and control. Coordinate with QC lab to crosscheck certain process for better Quality Control.
• Checking CIP in process vessels, tanks, pipes
• Order brewing materials, brewery chemicals, and related replacement parts to arrive on time and in proper amounts.
• Maintain detailed records and inventory of raw materials, quality checks, and production schedules
• Assist and supervise the ERP data entry related to process
• Develop and implement Brewery SOPs and ensure standards are always met.
• Other activities as advised by the supervisor.
